Enokitake (Flammulina velutipes) is a slender, white edible mushroom popular in East Asian cuisine. It contains immunomodulatory polysaccharides (FIP-fve), antioxidant phenolic compounds, and unique sesquiterpenes called enokipodins with antimicrobial activity.
Enokitake polysaccharides stimulate splenocyte proliferation, increase IL-2 and IFN-γ (Th1-skewed response), and enhance natural killer cell activity. FIP-fve (Flammulina velutipes protein) induces T-cell proliferation and modulates gut microbiota by increasing beneficial Bacteroides and short-chain fatty acid production.
